A lovely lady named Madeline came into the park this weekend and after sampling one of Prue’s amazing dampers cooked in the camp oven, on a beautiful big open fire, she offered us a recipe of a better one (her words)Ingredients:

3 cups SR flour

¼ cup sugar

1 can beer

¼ cup currants (or any dried fruit)

Method:                                                                                                                                                                                                       Place sugar in a bowl, add beer, add flour and mix.  Add dried fruit.

Wait 15 minutes (fo犀利士
r gluten to release).

Spray or paper loaf tin.  Bake in 180*c  (on the low shelf)  35 minutes.

After Rod read this recipe, his remark was “that’s a brownie!….but in the oven?”

I guess he’s only ever cooked a damper in a camp oven on an open fire.

Still, this recipe is worth a try.
